Ingredients to make Saag Paneer
Paneer – 200 grams
Mustard leaves – 250 grams
Spinach – 250 grams
Fenugreek – 125 grams
Tomato – 3
Green coriander – 1 bunch
Green chili – 2-3
Cumin – 1 tsp
Coriander powder – 1 tsp
Red chili powder – 1/4 tsp
Asafoetida – 1 pinch
Gram flour – 1 tbsp
Ginger paste – 1 tsp
Desi ghee – 1 tbsp
Oil – 3 tbsp
salt – as per taste

Saag Paneer Recipe
To make Saag Paneer full of taste and nutrition, first break the mustard leaves, spinach and fenugreek leaves and separate the stems. After this wash all the leaves with clean water and then drain the extra water by placing them on a strainer. After this, cut the leaves thickly. After this cut the paneer into square cubes. Then finely chop tomatoes, green chilies, green coriander leaves.

Now put chopped leaves of mustard, fenugreek and spinach in the cooker and put half a cup of water on top and cover it. After this, keep it on the gas and cook it till 1 whistle. Now turn off the gas and let the pressure of the cooker release. Meanwhile, put chopped tomatoes and green chilies in a mixer jar and grind them to make a paste. Now take out this paste in a bowl and keep it aside.
Now take a pan and heat 1 teaspoon oil in it. After the oil is hot, add paneer pieces to it and fry till it becomes golden. After this, take out the paneer pieces in a bowl. Now put 2-3 tbsp oil in the pan and heat it. After the oil is hot, add cumin and asafoetida and fry it. After a few seconds, when the cumin starts crackling, add ginger paste, coriander powder and gram flour and fry it.

After roasting them for some time, add tomato chili paste and red chili powder to it. Now cover the pan and cook till the gravy leaves oil. Meanwhile, open the cooker, take out the boiled vegetables and grind them coarsely with the help of a mixer jar. When the gravy leaves the oil, put the leaves of the ground green vegetables in it. Now cover the pan and cook them for 5-6 minutes. During this, keep the gas flame low.

When the vegetable gravy starts boiling, add fried paneer pieces and salt as per taste and mix it well with the gravy with the help of a big spoon. After this, cook the vegetable for 3-4 minutes and then turn off the gas. The flavourful Saag Paneer curry is ready. Take it out in a serving bowl and garnish with coriander leaves. Put 1 spoon of desi ghee on top of the vegetable and serve it with roti, paratha or rice.
